一直聽說Quinoa是很好的鹼性食物,但是我一向只會煮了quinoa當飯吃,或是包在豆皮裡當壽司食用。偶然的情形下看見quinoa bites的食譜,感覺似乎很美味。於是這是這週的功課:Quinoa Bite
Cheesy Quinoa Bites (makes 28-30 bites)
2 cups cooked quinoa
2 large eggs
1 cup shredded carrot
2 stalks green onion, diced
2 cloves garlic, minced
1/4 cup chopped fresh cilantro
1/2 cup grated Parmesan cheese
2 Tbs all-purpose flour
1/2 tsp seasoning salt (試了之後發現不需要放鹽,不然會太鹹)
1/4 tsp freshly ground pepper
1. Preheat oven to 350 degrees.
2. Mix together quinoa, carrot, egg, green onion, garlic, cilantro, cheese, flour, salt and pepper.
3. Distribute mixture into a greased mini muffin tin, filling each cup to the top (1 heaping Tbs each).
4. Bake for 15-20 minutes.

1.幾週下來女兒已經是切工很好的小廚師了,不過在grease mini muffin pan時,很猶豫"油"的拿捏度。放太少怕沾黏,放多了又怕太油膩。第二次試做的時候,我們改成放mini muffin cup paper取代用油grease,效果更好取出也更簡單。
