之前女兒去朋友家參加birthday party時,吃到這個超級好吃的海綿蛋糕。不同於一般美國蛋糕的死甜,這個海綿蛋糕喚起我們小時候那個橢圓型海綿蛋糕的味覺記憶。向朋友要了食譜之後,試著做過幾次。每次都覺得蛋白得打到天荒地老才能堅毅挺拔。剛好今天收到最近訂的mixer,那麼開工大吉的,就是請他來打蛋白囉!
Sponge Cake
Ingredients:
10 large eggs
½ tsp. cream of tartar
½ tsp. baking powder
1 c. pure cane sugar (我們用2/3杯糖)
1 c. corn oil
1 c. cake flour
2 tsp. vanilla
¼ tsp. salt
Procedure:
In a large mixing bowl on high speed, mix the following for 7 to 8 minutes until it is fluffy.
10 egg whites
½ tsp. cream of tartar
½ tsp. baking powder
½ c. pure cane sugar
In a second bowl on medium speed, mix the following for 6 minutes.
10 egg yolks
1 c. oil
1 c. cake flour
2 tsp. vanilla and/or chardonnay
¼ tsp. salt
½ c. sugar
Add yolk mixture into egg white mixture by using the mixer until uniform. Bake 350 F for 30 minutes, then 300 F for 30 minutes. Turn off oven. Wait 1 minute. Remove from oven. Slap sides of cake pan twice. Turn upside down to cool. Do not use non stick pan.
