之前女兒去朋友家參加birthday party時,吃到這個超級好吃的海綿蛋糕。不同於一般美國蛋糕的死甜,這個海綿蛋糕喚起我們小時候那個橢圓型海綿蛋糕的味覺記憶向朋友要了食譜之後,試著做過幾次。每次都覺得蛋白得打到天荒地老才能堅毅挺拔。剛好今天收到最近訂的mixer,那麼開工大吉的,就是請他來打蛋白囉!

Sponge Cake

Ingredients:

10 large eggs

½ tsp. cream of tartar

½ tsp. baking powder

1 c. pure cane sugar (我們用2/3杯糖

1 c. corn oil

1 c. cake flour

2 tsp. vanilla 

¼ tsp. salt

 

Procedure:

In a large mixing bowl on high speed, mix the following for 7 to 8 minutes until it is fluffy.

10 egg whites

½ tsp. cream of tartar

½ tsp. baking powder

½ c. pure cane sugar

 

In a second bowl on medium speed, mix the following for 6 minutes.

10 egg yolks

1 c. oil

1 c. cake flour

2 tsp. vanilla and/or chardonnay

¼ tsp. salt

½ c. sugar

 

Add yolk mixture into egg white mixture by using the mixer until uniform.  Bake 350 F for 30 minutes, then 300 F for 30 minutes.  Turn off oven.  Wait 1 minute.  Remove from oven.  Slap sides of cake pan twice.  Turn upside down to cool.  Do not use non stick pan.

之前最耗時的部分,就是打蛋白。這次有了mixer這個好幫手,一切變得更方便簡易。也更加感念以前的麵包師傅,要做出好吃的蛋糕,過程有多麼辛苦不易!
